Baking - Sugar Cookies with Cinnamon icing

This is a really simple and easy recipe but despite it's simplicity its still very delicious. I like making sugar cookies because of how quick you can make it, I also like making them when we don't have any sweets or desserts because I can make them fast.

Ingredients

1 cup butter

1 1/2 cups granulated sugar

1 large egg

2 1/4 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon Kosher salt

1 teaspoon vanilla extract

Instructions

  • Preheat oven to 175 °C
  • . Line cookie sheets with parchment paper or a nonstick baking mat.
  • Cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add egg and mix until well-combined.
  • Stir in flour, baking powder, and salt until well-combined. Stir in vanilla.
  • Scoop cookie dough by the tablespoon full and roll into a ball.
  •  Place cookie dough onto baking sheet, spacing about 1 1/2-inches to 2 inches apart. Lightly press each cookie down. Bake for 8 to 10 minutes

For the Cinnamon Icing you just need to mix 1 cup of powdered sugar, 2 teaspoons of Cinnamon, 1 teaspoon of vanilla extract, and 2 tablespoons of milk.

Baking - Chocolate Crinkles

I like making Chocolate Crinkles because there easy and quick to do, they taste delicious as well. I also like making them because my little brother likes them a lot. I'm going to share the recipe that I used because this was one of the best recipes for making Chocolate Crinkles.

INGREDIENTS

  • 1 cup natural unsweetened cocoa powder
  • 1 1/2 cups white granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar

1 Beat together cocoa powder, white sugar, vegetable oil: In the bowl of an electric mixer fitted with the paddle attachment (or beat by hand with a wooden spoon) beat together the cocoa powder, white sugar, and vegetable oil until it comes together into a shiny, gritty, black dough of sorts.
2 Add eggs, one at a time, add vanilla: Add the eggs, one at a time, mixing for 30 seconds each. Add the vanilla and beat in thoroughly.
3 Whisk together flour, baking powder, salt, espresso powder: In a separate bowl, whisk together the flour, baking powder, salt, and espresso powder if using.
4 Beat dry ingredients into cocoa oil mix: Mix into the chocolate mixture on low speed until just combined. Do not over-beat.
5 Cover and chill: Cover the dough with plastic wrap and chill the dough for four hours or overnight.
6 Get ready for baking: Preheat the oven to 350°F and line two baking sheets with parchment paper. Place the powdered sugar in a wide bowl.
7 Roll the cookies: Using a rounded teaspoon, scoop out clumps of the chilled dough and roll them into 1-inch (2.5 cm) sized balls using your hands. Do several at a time and drop them into the powdered sugar as you go. The dough will be quite sticky, so it's useful to roll the dough in batches.
Roll the balls in the powdered sugar and place on the cookie sheets spaced a few inches apart. (You should be able to get 12 to 16 on each sheet).
7 Bake: Bake at 350°F for 10 to 13 minutes. Allow to cool a minute or two on the sheets before transferring to a wire rack to cool completely. Repeat with any remaining batter.
8 Store: Store these cookies in an airtight container on the counter. They will keep for at least a week before starting to become crumbly and dry.

Baking - Cinnamon Rolls

This was my first time making Cinnamon Rolls from scratch. It was really fun but its was also time consuming. I unfortunately forgot take pictures so ill just share the recipe that I used to make these delicious Cinnamon Rolls.

Ingredients

  • For the dough:
  • ¾ cup warm milk (whole milk or 2% preferred) (110 degrees F)
  • 2 ¼ teaspoons quick rise or active yeast (1/4-ounce package yeast)
  • ¼ cup granulated sugar
  • 1 egg plus 1 egg yolk, at room temperature
  • ¼ cup unsalted butter, melted
  • 3 cups bread flour, plus more for dusting
  • 3/4 teaspoon salt
  • For the filling:
  • 2/3 cup dark brown sugar (light brown sugar also works)
  • 1 ½ tablespoons ground cinnamon
  • ¼ cup unsalted butter, softened
  • For the cream cheese frosting:
  • 4 oz cream cheese, softened
  • 3 tablespoons unsalted butter, softened
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Warm milk to around 110 degrees F. I like to do this by placing milk in a microwave safe bowl and microwaving it for 40-45 seconds. It should be like warm bath water. Transfer warm milk to the bowl of an electric mixer and sprinkle yeast on top. Add in sugar, egg, egg yolk and melted butter. Mix until well combined. Next stir in flour and salt with a wooden spoon until a dough begins to form.
  2. Place dough hook on stand mixer and knead dough on medium speed for 8 minutes. Dough should form into a nice ball and be slightly sticky. If it's TOO sticky (meaning it's sticking to the bottom of the mixer, add in 2 tablespoons more bread flour.) If you don’t want to use an electric mixer, you can use your hands to knead the dough for 8-10 minutes on a well-floured surface.
  3. Transfer dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Allow dough to rise for 1 hour to 1 ½ hours, or until doubled in size. This may more or less time depending the humidity and temperature in your home.
  4. After dough has doubled in size, transfer dough to a well-floured surface and roll out into a 14x9 inch rectangle. Spread softened butter over dough, leaving a ¼ inch margin at the far side of the dough.
  5. In a small bowl, mix together brown sugar and cinnamon. Use your hands to sprinkle mixture over the buttered dough, then rub the brown sugar mixture into the butter.
  6. Tightly roll dough up, starting from the 9-inch side and place seam side down making sure to seal the edges of the dough as best you can. You will probably need to cut off about an inch off the ends of the dough as the ends won’t be as full of cinnamon sugar as we’d want it to be.
  7. Cut into 1 inch sections with a serrated knife or floss. You should get 9 large pieces.
  8. Place cinnamon rolls in a greased 9x9 inch baking pan or round 9 inch cake pan. (I also recommend lining the pan with parchment paper as well, in case any of the filling ends up leaking out.) Cover with plastic wrap and a warm towel and let rise again for 30-45 minutes.
  9. Preheat oven to 350 degrees F. Remove plastic wrap and towel and bake cinnamon rolls for 20-25 minutes or until just slightly golden brown on the edges. You want to under bake them a little so they stay soft in the middle, that’s why we want them just slightly golden brown. Allow them to cool for 5-10 minutes before frosting. Makes 9 cinnamon rolls.
  10. To make the frosting: In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla extract. Beat until smooth and fluffy. Spread over cinnamon rolls and serve immediately. Enjoy!

Manga Pasifika Doodle

I finished my work on visual arts and I think it turned out great but i do wish it could have looked a little more neat but it still looks good. I drew two since I didn't really like the first one that I did.

This was the fist one that I drew and although I think it looks good, its not really colourful and there's not much detail as well and that's why I decided to make another one.

This is the second one that I drew, I still think that its not that neat but it still looks better than the first one that I drew.

Why I haven't been posting on my Blog lately.

As you may have noticed, I haven't been posting on my blog lately and that is because I have been quite busy on doing house chores everyday and since my mum is at work from 8am - 5pm, i'm usually the one taking care of my two younger siblings, but I do make sure that I make some time to do my work. I've also been baking a lot lately so i'll make sure to post the recipes I used on my blog. I've finished my work for Visual Arts so I will also make sure to post about what I did on my blog. I am now working on finishing my ESOL, Japanese, and other hurumanu work. I hope all of you are safe and staying in your bubble.
